Job overview The Kitchen Steward is responsible for cleaning, transporting, storing all kitchen utensils, cookware, bakeware, glassware, silverware, china, as well as maintaining the cleanliness of the kitchen, kitchen storage rooms, and employee break area. The Steward is required to adhere to the mission and values of Widewaters Hotels, LLC. What you will be doing The Kitchen Steward is focused and responsible for the following: Clean and Sanitize all kitchenware in the hotel Ensure restaurant and banquet kitchen have the necessary amounts of kitchenware to properly open their shifts. Responsible for the proper sanitations and cleanliness of all kitchens and food preparation areas, including ovens, grills, stoves, hoods, fryers, prep slicers, steam kettles, tables and floors. Set up dishwasher properly and operate to ensure that all china, glass and silver are cleaned thoroughly and sanitation of such is maintained to comply with company policy and health regulations. Return all clean china; glass and silver in its proper storage location using care to minimize breakage Burnish, de-tarnish and polish silver as needed. Stock and maintain supplies and equipment. Perform food preparation functions in the event to staffing shortages or during peak periods. Sweep and mop floors in the kitchen and restaurant Empty garbage from Food and Beverage areas into the hotel dumpster. Maintain the cleanliness of the back dock and dumpster area. Know the location and operation of all fire extinguishing equipment. Practice safe work habits at all times to avoid possible injury to self or other employees. Follow the proper procedures in the breakdown, cleaning and reassembling of all kitchen equipment as needed. Develop and maintain positive working relationships with others and support team to reach goals. Must have the ability to lift and move heavy equipment on a continuous basis throughout the shift Responsible for following the highest sanitation level in the culinary department by adhering to weekly and daily audits and closing lists. Responsible for adhering to all state, county and city sanitation standards. Responsible for following Prep Lists accordingly. Report any equipment in need of repair to Executive Chef/Sous Chef Must be a team player and assist in satisfying work needs of others Must be able to work in a fast-paced environment Must have ability to work a flexible schedule. Certifications Safe Food Handling Certification to obtain within 90 days of employment CPR certification and/or First Aid training preferred. If you are employed in St. Louis County, a Hep-A vaccination is required prior to beginning employment. Physical demands Most work tasks are performed indoors. Temperature generally is moderate and controlled by hotel environmental systems; however, must be able to work in extreme temperatures like freezers (-10F) and kitchens (+110F), possibly for one hour or more. Ability to physically handle knives, pots, mirrors, or other display items as well as grasp, lift and carry same from shelves and otherwise transport up to 50 pounds to every area of the kitchen. Ability to perform cutting skills on work surfaces, topped with cutting boards, three to four feet in height (banquet kitchen, prep kitchen, bake shop, etc.). Proper usage and handling of various kitchen machinery to include slicers, buffalo chopper, grinders, mixers, and other kitchen related equipment. Ability to create, build, handle, and dismantle displays up to eight feet high, including ice carvings.
